Nourish
Welcome to 2026. We have officially kicked off the year with our first Girls’ Night, and I can honestly say that my soul feels refreshed. Our word for the year is:
Nourish - to provide with the food or other substances necessary for growth, health, and good condition.
To help bring this word to life, we are reflecting on the following question:
What does it mean for me to be nourished in this season?
Also, we want to take some time to be intentional about nourishing our community, our health, our minds, and, most importantly, our walk with the only one who can truly help us live well: The Lord. In honor of this, we have some exciting Girls’ Night opportunities coming up, and I want to be more intentional about sharing my own health journey. Many of you may know that I have been a vegetarian since 2016, with a few stints of rebellion in between. I have been back on the straight and narrow since around 2022/2023 and am ready to kick it up a notch by transitioning to a healthier vegan lifestyle. Yes, girl, vegan. I must be serious this time because I am telling people, which is wild.
Anywho, many of you expressed a mix of concerns about changes you are seeing in your bodies and an interest in learning how to care for yourself more holistically. While I am no expert, I recognize the power of not taking all of this on alone. So let’s help each other by sharing recipes, being honest, and supporting each other every step of the way. This month’s nourish tip is my new favorite Jackfruit “Chicken” Salad.
Jackfruit “Chicken” Salad
Ingredients
2 cans of Jackfruit
Vegan Mayo
2 stalks of celery
Sweet Relish
Black Pepper
Salt
Seasonings of your choice
Directions
1. Drain water from the jackfruit (you don’t want it to be wet, some people take an extra step to pat it dry with a paper towel)
2. Place Jackfruit and seasonings in blender. I don’t measure my seasonings because my Granny didn’t so may the odds be ever in your favor. Don’t let it get too mushy, the point is to shred it similarly to how you would chicken. If you prefer you can also shred it with a fork or whatever gets the job done.
3. Finely chop 2 stalks of celery. I use a chopper but again whatever gets the job done.
4. Place shredded jackfruit in a bowl and add 2 tablespoons of Mayo. Start with this amount and if you need more add it in a little at a time to avoid putting to much.
5. Add in chopped celery and 1 tablespoon of sweet relish.
6. Now it’s time to stir it all together and add more mayo or relish if needed.
7. Top it off with another sprinkle of black pepper and enjoy!
